Mature, open and still sparkly
This bottle of Pol Roger Brut from 1988 has definitely been stored in a good cellar before it reached our home. It comes from a producer that makes really good Champagne, and as soon as you open the bottle, it is accessible and ready to be enjoyed.
The smell is open and wonderful, and it tastes of yellow apples with a hint of mocha. And there is still “mousse” in the bottle.
