Petraea is a fresh and rich bottle of organic Champagne that works well with food.
Francis Boulard makes organic Champagne. He is inspired by Jacques Selosse in his work, and he is doing a good job. The Champagne is made of 60% Pinot Noir, 20% Chardonnay and 20% Pinot Meunier.
Right from the beginning it smells like fruit and white flower. It made me think of summer. When it comes to taste, it is rich and quite powerful, due to the pinot noire. It is also fresh and crispy tasting, but perhaps a bit short in the mouth. This evens out after the bottle gets some air and gets less chilled.
This bottle needs and goes well with food. Also dishes that are a bit spicy. Works very well with butter and salty dishes too.
